Ingredients:
1 whole chicken cut up into 4-6 pieces skin on
1 cup fresh basil leaves
1 1/2 onion cut into slices
2-3 teaspoon olive oil
1 lemon
salt and pepper to taste
Method:
- Pre-heat oven to 375C.
- Pour the oil at the bottom of the baking dish. Add the onions at the bottom.
- Wash the chicken pieces with the skin on. Pat dry with a paper towel.
- Push the basil leaves below the skin.
- Add salt and pepper to taste on top.
- Cut the lemon and squeeze the juice on top of the chicken.
- Bake uncovered in a pre-heated oven at 375C for 1 hour.
