250g Green Beans
3 Red Peppers
4 large cloves of garlic
2 tablespoons olive oil
salt to taste
To make the Roasted Pepper sauce:
- Cut the heads off the peppers and remove the seeds.
- Cut peppers in 1/2
- Place on a baking tray with cut side down.
- Set oven to HIGH Broil. Put the peppers in the oven for 8-12 minutes until the top is black.
- Remove from the oven and immediately put in a bowl and cover with plastic wrap. This allows the peppers to steam and makes it easy to remove the skin.
- Remove skin from the peppers - it should just peel off.
- Blend peppers and garlic for about 2 minutes until it is pureed. You do not need to add any oil or water the moisture in the peppers should be enough.
To make the Green Beans:
- Heat the pan on a high flame. Add the olive oil.
- Add beans and stir - cook beans until they are slightly brown (about 3 minutes).
- Add Roasted Pepper sauce and stir. Cover and allow to simmer for 5 minutes. Add salt to taste.
